“The vines are grown at Srednji Breg in Čortanovci, with a minimum of plant-protection treatments and no herbicides.”

All work in the vineyard is done by hand, with a green harvest in June to reduce the yield and bring the grapes to their highest quality. Picking is by hand into shallow 9 kg crates, with everything turning on the ideal moment to harvest.

The chilled grapes are crushed straight into the press without pumps, where they macerate before fermenting in temperature-controlled tanks. After fermentation the wine ages on fine lees for six months. Malolactic fermentation is not used.
