Sparkling Babaroga

“The vines are grown at Veliki Vrhovi, Banstol, with minimal use of plant-protection treatments and no herbicides.”

In years when phenolic ripeness can be reached at the right sugar level, the grapes are picked by hand into shallow 9 kg crates and pressed whole, without crushing, after which they ferment in barriques — where malolactic fermentation also takes place.

Once the base wine has aged in barrique it is bottled, and the secondary fermentation happens in the bottle. The wine then rests on the lees in bottle for five years.
